Bikini Recipe

Makes enough for 10 people

Ingredients for the Clementine Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

Ingredients for the Drink (yields 850ml, serving 10)

400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
A few cranberries, for garnish
Mandarin essential oil, to finish

Directions

For the Cordial: Place all the components into a pot, heat until it reaches a gentle boil, stirring so the sugar melts. After that, turn off the heat allowing it to cool fully. Pour into an sterilised bottle, seal keeping it in the refrigerator, where it will keep for around a month.

Preparing the Cocktail Base: Mix all the liquids into a sizeable container, leave to sit for one hour, then filter it , ideally through cheesecloth, making it completely strained.

For serving: Measure 85ml of your batch mix into your stirring glass containing ice, gently stirring lightly for a minute to cool it down. Strain to a frosted cocktail glass or similar, decorate with the cranberries adding the final touch using a quick spritz of the essential oil over the drink.
